GREAT STEAKS

INSTRUCTIONS – This is a 2 stage cook

      Stage 1

    1. Peel potatoes cut in half lengthwise then into ½ inch strips
    2. Soak in cold water
    3. Heat oil in deep pan
    4. Once the oil is hot, remove the potatoes from the water and dry.
    5. Blanch the potatoes for 6-8 minutes, do not crowd the pan (you can work in batches if necessary)
    6. Remove from oil (slotted metal spoon or metal tongs)
    7. Place on paper towel lined tray
    8. Let cool
    9. Once cool, chop into in ¼ inch dice

      Stage 2

    1. Preheat oven to 400
    2. Add oil into oven safe pan, heat
    3. Add chopped onion
    4. Add 3tbls paprika
    5. Add salt
    6. Sauté for 5 minutes or until the onions are softened and browned
    7. Add potatoes, butter salt and pepper mix well
    8. Place into oven to crisp up (about 5-10 minutes)
    9. Stir after 3 mins to check doneness
    10. Remove from oven and serve

INGREDIENTS

  • 3lb-5lb of roasting potatoes peeled
  • One Large Yellow onion chopped (pieces should be the size of dimes to nickels)
  • Paprika
  • Salt/Pepper
  • Oil
  • 2tbls butter
