
INSTRUCTIONS – This is a 2 stage cook
Stage 1
-
- Peel potatoes cut in half lengthwise then into ½ inch strips
- Soak in cold water
- Heat oil in deep pan
- Once the oil is hot, remove the potatoes from the water and dry.
- Blanch the potatoes for 6-8 minutes, do not crowd the pan (you can work in batches if necessary)
- Remove from oil (slotted metal spoon or metal tongs)
- Place on paper towel lined tray
- Let cool
- Once cool, chop into in ¼ inch dice
Stage 2
-
- Preheat oven to 400
- Add oil into oven safe pan, heat
- Add chopped onion
- Add 3tbls paprika
- Add salt
- Sauté for 5 minutes or until the onions are softened and browned
- Add potatoes, butter salt and pepper mix well
- Place into oven to crisp up (about 5-10 minutes)
- Stir after 3 mins to check doneness
- Remove from oven and serve

- 3lb-5lb of roasting potatoes peeled
- One Large Yellow onion chopped (pieces should be the size of dimes to nickels)
- Paprika
- Salt/Pepper
- Oil
- 2tbls butter
